Pizza and bakery product sales during school breaks
Summary
The concession is for two years and covers the sale of pizza, focaccia and similar bakery products during school breaks at the Varano Antinori upper secondary school in Camerino. The service must operate from three sales points and is intended for a potential user group of approximately 1,000 students and 200 staff members. The concessionaire must arrange production, transport and sales and bears the full commercial risk associated with demand and operations; a fall in sales does not reduce the fee payable to the school. Estimated total turnover over the concession is EUR 100,000 excluding VAT. The minimum annual concession fee is EUR 2,500, or EUR 5,000 for the two-year term, and bidders may offer a higher amount. The award is based on up to 30 points for service quality, 40 points for product prices and 30 points for the annual fee. The technical bid must describe relevant experience, service arrangements and staffing, insulated transport containers, punctuality and queue management, and the origin and quality of ingredients. Products must be of good quality and safe to eat. Preference is given to organic, locally sourced or protected-quality ingredients and products freshly prepared on the day. Hydrogenated fats, artificial colourings and excessive preservatives are prohibited. Full traceability of ingredients, compliance with hygiene rules and the HACCP plan, and clear allergen information are required. The concessionaire must operate all three sales points, provide sufficient staff in clean work clothing, and bear all labour, operating and other costs. Submission of a bid constitutes acceptance of the tender conditions.
